An order placed in one app can be filled by an order placed in another. The app decides the screen and the fee, not the liquidity.
Where people actually trade
Every app can stamp its transactions with a number or a memo of its own, so the ledger shows which app a trade came from. 3.69 million XRP was traded in the last 7 days, 97% of it through apps that identify themselves:

What changes from app to app
The fee. The ledger charges no trading fee on its order book; apps add their own. xrpl.to charges 0.4%, Xaman 0.8% (Xaman’s fees), First Ledger 1% on token trades (First Ledger review). Check any other app’s fee before you trade: it is the main cost of a swap.
Where it runs. Some are phone apps, some websites, some trading bots in Telegram. The wallet guide compares where each runs.
What it shows before you sign. The price impact of your order, the token’s holders and issuer, and any scam warning. Those decide whether a trade is a good idea; the exchange is the same either way.
Order types. A swap fills now at the best price; a limit order waits on the order book until someone meets your price.
